Founded by Olivier Bertrand, a seasoned hospitality professional with a passion for food, and Felipe Salles, an acclaimed chef with international experience, OLI wine&dine brings together innovative flavors and exceptional service. The all-day establishment features a diverse menu and an extensive selection of Portuguese craft beers and wines, along with a variety of international spirits which can be enjoyed on our terrace.
Our Story
At OLI wine&dine, our story is a tapestry woven from passion, creativity, and a love for exceptional food and warm hospitality. This journey began with two individuals, Olivier Bertrand and Felipe Salles, who shared a vision of creating a unique dining experience in the heart of Lagos, Portugal.
The Birth of a Dream
Olivier Bertrand, a culinary enthusiast from Belgium, has been passionate about food since childhood. After graduating from the prestigious Restaurant and Hotel School Ter Duinen in 1997, Olivier's career took him to Michelin Star restaurants and high-profile hospitality brands across Europe. His journey through the world of gastronomy included roles at Wagamama, Burger and Lobster, Soho House, and Gaucho. During a holiday in Lagos in 2022, Olivier fell in love with the scenic beauty, vibrant culture, and relaxed atmosphere of this coastal town. It was here that he decided to turn his lifelong dream of opening a restaurant into reality.
A Culinary Maestro Joins the Team
Felipe Salles, our talented head chef, hails from the mountains of Minas Gerais, Brazil. Felipe's culinary journey is a testament to his dedication and passion for cooking. Self-taught and driven, Felipe's career took him from the gastronomic hubs of France to the bustling kitchens of Ireland and Portugal. His creative flair and innovative approach to Mediterranean cuisine have earned him accolades, including being named one of the top 6 chefs on the Portuguese south coast in 2020 and being a contestant on Brazil’s TopChef 2021. Felipe's dream of achieving a Michelin star fuels his commitment to excellence, and we are thrilled to have him lead our culinary team.
Bringing the Vision to Life
The concept of OLI wine&dine was born out of a shared love for good food and a relaxed atmosphere. Olivier and Felipe envisioned a place where people could enjoy contemporary Mediterranean dishes, crafted with fresh, locally sourced ingredients and infused with diverse flavours and techniques. To bring this vision to life, they collaborated with Joao Henriques from My Colibri Home Concept to design a sleek, modern interior that complements the culinary experience. The result is a warm and inviting space where guests can unwind and savor every moment.
